There are about 800 olive trees in our estate. They all are over 50-years-old. Six-hundred of them (leccino, moraiolo and frantoio) lie in the southern side of the estate, in Valloni, (Arezzo).The other 200 (mostly moraiolo) lie in the north-western side, near Subbiano. All the olive trees grow on permanently mantained grassland. Pruning usually takes place in February, followed by mainly organic fertilization. If needed, the trees are treated from once to three times a year (in May and September).

EXTRA VIRGIN OLIVE OIL

OLIVE GROVES LOCATION: north facing side of the estate, near Subbiano (Casentino)

ALTITUDINE: 300/350 metres above sea level

TREES AVERAGE AGE: over 50 years old

CULTIVAR: 95% moraiolo and other pollinators

HARVEST: early October

HARVESTING METHOD: facilitated and hand picking

CRUSHING METHOD: in a continuous cycle within 24 hours from picking

STORAGE: stainless steel tanks

BOTTLES: dark glass dorica of 0.10/ 0.25/ 0.50 litre with not refillable cap

ORGANOLEPTIC NOTES: medium fruity with bitter spicy notes

GOES WITH: soups, grilled meat and legumes

Valloni

OLIVE GROVES LOCATION: south side of the estate, near the village of Marcena

ALTITUDE: 280 metres above sea level

AVERAGE AGE: about 100 years old

CULTIVAR: moraiolo, leccino and pendolino

HARVEST: mid-October

HARVESTING METHOD: facilitated and hand picking

CRUSHING METHOD: in a continuous cycle within 24 hours from picking

STORAGE: stainless steel tanks

BOTTLES: dark glass marasca of 0.10/ 0.25/ 0.50 litre with not refillable cap

ORGANOLEPTIC NOTES: strong fruity with hints of artichokes and spicy finish GOES WITH: white meat, fish and salads
